时间:1小时以上  主料  低筋粉200克;高筋粉50克;猪油1茶匙;盐1/4茶匙;沸水100克;冷水35克;热猪油适量;牛肉丝200克;小苏打1/4茶匙;盐1/8茶匙;鸡蛋1个;糖1茶匙;老抽1茶匙;白胡椒1/8茶匙;生粉2茶匙;植物油2汤匙;李锦记沪式甜面酱50克;1茶匙;老抽3/4茶匙;砂糖30克;蒜泥10克;姜末10克;水2茶匙;京葱丝适量;黄瓜丝适量;红菜头丝适量;
  烤鸭薄饼包京酱牛肉丝的做法步骤  1. 饼皮:将粉料(除刷饼皮用热猪油)放入碗中,先加入沸水搅拌成雪花片后,加入冷水揉成团,包上上保鲜膜放置10分钟,再次揉面团,再次放置10分钟。  2. 将面团擀成20cm×60cm的薄片,刷上一层热猪油后撒一点面粉,一折二。  3. 再次擀开,用直径6.5cm的圆模压下12个(24片)薄片  4. 在两个薄片上刷油撒粉,另两个叠上,成6组。  5. 待冷却后,将薄片擀成直径16cm大小的圆形,上笼蒸4-5分钟。  6. 取出后叠在一起,用直径15cm的圆形模压着,用小刀修去周围多余的边,然后一张一张撕开,叠放在一起,包上保鲜膜备用。  7. 京酱牛肉丝:将牛肉切丝(可用、牛腿肉)后用冷水冲洗完血水,挤干水份,加小苏打、盐、鸡蛋打上劲,再加入糖、老抽、白胡椒粉,打匀上劲,加生粉拌匀,最后加入植物油封油,醒1至2小时。  8. 热锅冷油(比牛肉少一半的油)将切好的牛肉丝滑油变色成丝,滤油后备用。  9. 将锅内的油倒出,将姜末蒜茸倒入锅中煸香后加入剩余酱料调匀。  10. 加入牛肉丝,与酱料翻炒均匀后装盘。  11. 组合:每张薄饼中加入京酱牛肉丝、黄瓜丝、京葱丝、红菜头丝卷成饼即可享用。  健康功效  牛肉:补脾胃、强筋骨、益气血  花椒:温中、止泻、止痛  八角:理气、止痛、温阳    食材用料  牛肉500克;花椒十几粒;八角两颗;桂皮一块; 香叶四片;小茴香一小勺; 白寇两粒;料酒一大勺; 盐适量; 鸡精适量; 生抽一勺; 老抽两勺;姜两片;葱白两段; 红干辣椒两个;糖一勺;  五香卤牛腱的做法  1.准备材料  2.肉入水焯出血水  3.加材料入锅  4.选择炖肉键  5.出锅啦,在卤中自然放凉  6.碗中放蒜末,小米椒,盐,生抽,糖,热油倒入碗中拌匀  7.牛肉切片,把准备好的调料倒入拌匀  小贴士  的时候我一般都不放太多香料,容易抢走肉香味!卤好的肉放凉更容易切一些,放入冰箱冷藏最佳!卤过的牛肉有淡淡咸味,根据自己的口味适量调味就好五香卤牛腱  健康功效  酱油:升压、补血、护齿    食材用料  牛腱500克; 五香卤料1包;葱适量;姜适量;酱油适量;米酒少许; 红葱头3个;大蒜4辨;辣椒4颗;  五香卤牛腱的做法  1.牛腱投入开水中焯一下去血水  2.捞出来备用  3.葱切段、红葱头切粒,姜切片,大蒜拍扁去皮  4.把第三步材料倒入热油锅里爆香  5.烧一锅开水,倒入爆香过的材料  6.投入牛腱  7.加入酱油  8.加入五香料包  9.加入米酒,瞬间满屋飘香,很享受这种感觉哦  10.文火煲3小时,然后加入辣椒葱段,继续煲3分钟  11.取出来用筷子插一下,试试中间是否已经熟透,能一筷穿透证明已经熟透入味  12.散热  13.待不烫手时切成片约0.5公分左右厚度  14.装盘,香菜辣椒做装饰  15.取一个小碟装香菜、蒜蓉、葱叶做蘸酱,不过不蘸酱也已经很香了哦  小贴士  汤在加入酒之后满屋飘香,这个过程是对嗅觉最好的奖励。汤可以做,或卤肉卤蛋,存冰箱里随时可以取用,非常方便。酱牛腱#给爸爸做道菜#

  酱牛腱#给爸爸做道菜#的做法步骤  1. 准备食材  2. 牛腱子肉用清水浸泡之少2小时,将血水泡出,期间可换些水~  3. 锅内烧水,水量以末过牛腱子肉为宜,除牛肉外,放入干料  4. 放入葱姜  5. 放入冰糖  6. 生抽  7. 放入老抽后,熬煮15-20分钟  8. 另起锅内烧水,凉水将牛肉放入焯水,大概5分钟左右捞出~  9. 牛肉放置完全冷却后,放入熬煮好的料水里,加入盐~  10. 大火煮沸,改中小火煮~  11. 煮至牛肉可以被筷子轻松插入就可以关火了~  12. 将牛肉捞出放至完全冷却就可以切片食用了~
