唯有美食与爱不可辜负冰岛红极参泡发攻略
第一次发冰岛红极参,大约海参都是同类,所以决定用普通海参的泡发方法。
第一步,准备一个干净无油无盐的器皿、纯净水。这次打算发海参9头。海参泡发期间,遇油会融化,遇盐会不发,用纯净水么,是由于自来水中有些说不清道不明的杂质,容易影响泡发。
第二步,准备就绪之后,将干海参略冲冲水就放入干净器皿中,倒入纯净水,浸没海参并略多些余地,以备参胖子们长大。泡48小时,期间注意早晚换水,夏天高温可以再增加一次,当然换的也是纯净水。
第三步,48小时之后,参胖子们已经初具胖子的体态,可以开始冰火两重天的集训了。先捞出洗净,去除杂质,冰岛红极参各个部分都能吃,所以内脏头角不去掉。但是,为了发得更大,建议将内腔的筋腱剪断,我每条剪了两刀,分三段。
第四步,火的考验。准备一口干净无油无盐的锅,理由同上,另外,我个人觉得不锈钢锅会影响口味,所以用了玻璃的康宁锅,性质稳定不易产生副作用。如果一段时间内都要吃海参的话,最好准备专用的器皿和锅来泡发海参。把海参放入锅中,倒入纯净水(是的,又是纯净水,所以可以多预备点),大火煮开之后转小火炖30分钟。关火,留它在原汤中自然冷却。6-8小时后捞出来。如果天气炎热,5小时左右尚未完全冷到室温,可以提前结束冷却过程,以免泡过头了肉质松散。另外,我在煮的过程中加了姜片葱丝去腥,怕影响后续加工的,也可以不加葱姜。
第五步,冰的考验。冷却的海参从汤汁中捞出,仍旧放入第一步的器皿中,倒入纯净水,加入冰块,盖上盖子或保鲜膜,放入冰箱继续泡发。实践证明,在冰水中泡发,比常温要发得更大。期间早晚换水,加冰(冰也是纯净水做的哦)。24-36小时之后,就大功告成啦。
第六步,当天不吃的海参,泡发之后用保鲜膜或保鲜袋装好,放入冰箱冷冻室保存,但也要尽快吃掉哦。
对比一下,参胖子发福不少呢,按重量基本都能达到原来的6-10倍。
